I recommend Mt. Cheaha mostly because it is the highest point in Alabama. The view's pretty good, and the roads getting there are also quite scenic.
It's also a very easy hike. It's actually handicap-accessible, comprised mostly of a boardwalk through the woods.
There are hiking trails around that are more suited to those who want a more serious hiking experience.
Unless you have money to burn, I do not recommend the restaurant on the mountain. Its food was nice, but (IMO) not worth the exhorbitant prices they charged.
